Video: Recipe: White Truffle Eggplant Rounds

I’ve been experimenting with video a lot lately, trying to integrate it into my blog posts. One of the things I’ve been playing with is making cooking videos! I’ve been doing them slideshow-style, which makes it easy because all I have to do is snap a few photos here and there as I cook and then I can edit them together later. I can even do the entire process on my iPhone! (I got one about a month ago and I am amazed at how easily I can create media with it! You might even say I am a little obsessed.)
Here is my first cooking video, showing how to make White Truffle Eggplant Rounds. They’re kind of like tater tots but made with eggplant, with the rich, earthy flavor of truffle oil and a light, crispy panko breading. Serve with ketchup or aioli for dipping.
One of my favorite things about this recipe is that it uses two kind of unusual ingredients: eggplant and white truffle oil. I haven’t worked with eggplant much, and the bottle of white truffle oil got cracked open for the first time to make a batch of these. But ya know what? I was unafraid. Food doesn’t scare me. (Except some of the shit Andrew Zimmern eats, but that’s a whole different level of expanding your culinary horizons.)
