Recipe: Pumpkin Spice Rice Krispie Treats (and 6 other yummy fall treats!)

Fall is one of my favorite seasons for food. I have a soft spot for squash, stuffing, and just about anything that has “pumpkin spice” in the name. So when the idea struck to incorporate it into Rice Krispie treats, I made an emergency trip to the grocery store for a bag of marshmallows so I could make them rightthisveryminute.
Here is my recipe, along with my Rice Krispie treat making secrets. I have several friends who also made some yummy seasonal treats; be sure to scroll to the bottom of the post to see the rest of the goodies too!
Ingredients:
- 3 Tbsp butter
- 4 1/2 cups mini marshmallows
- 6 cups Rice Krispies
(or other non-sugary cereal)
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1 tsp vanilla extract
Instructions:
Grease a 9 x 13 pan with cooking spray and set aside.
Over low heat, melt the butter. Now, I am going to tell you the most important thing you can ever know about making Rice Krispie treats. No matter how long things are taking to melt, do not turn up the temperature. If you let the butter brown at all, it will make your treats stiff and hard. Through the entire process of making these treats, you should stir constantly and, again, under no circumstances should you turn up that heat setting!
Once the butter is melted, stir in vanilla extract, pumpkin spice, and cinnamon.

Add the marshmallows. Stir them, and stir them, and stir them some more.

Stir until the mixture is completely smooth. It will get there, I promise – patience is key here!

Stir in the cereal. It might look like there is too much cereal and not enough marshmallow, but have faith and keep mixing. Once the cereal is evenly coated, dump it into the greased pan.

This is the most important step in the whole process: lick the spoon!
Use a piece of waxed paper to press the treats into an even layer in the pan. Let them cool for a few minutes, then chop ‘em up and devour!
I hope you love this recipe as much as I do! (Mr. Greene doesn’t really like Rice Krispie treats, and he ate almost half the pan the day I made them. Yeah, they’re that good!)
